Toni's Fried Okra
If you think okra is slimy, you haven't had Toni's fried
okra. When we lived in Kentucky, Dave and Toni were two of
our closest friends. They both grew up in Tennessee and
loved many of the traditions of their families. Toni
introduced us to fried okra. This is the way her mother and
grandmother made it, and those ladies knew what they were
doing. It is absolutely delicious.
INGREDIENTS:
Fresh okra pods
Bacon grease or vegetable oil
Coarsely ground yellow cornmeal
Salt and pepper to taste
PROCEDURE:
Wash the okra pods, remove the stems and slice into 1/4
inch rounds. For 2 cups of okra slices, you will need about
two tablespoons of grease and 2 or 3 tablespoons of
cornmeal.
Heat the grease in a large frying pan until it is
moderately hot. Add the okra slices and sprinkle them with
the cornmeal. Salt and pepper lightly. Fry on medium heat,
turning the okra once or twice, until lightly browned. Serve
hot.
