Red Hook, New York

Red Hook is located in northern Dutchess
County, about 100 miles north of New York City, in the mid-Hudson Valley. We currently raise Hereford beef cattle and
chickens.
Quality
Hereford Beef Cattle
We raise
Our cows raise their calves
on good grass, water and the clean air.
At Rossi Farm, we
believe it is best to raise cattle the way nature intended. We raise our cattle
without the use of growth hormones or antibiotics, feeding them a diet of
natural grains and grasses. It takes more time and expense to produce beef this
way, but it’s worth the wait. The end result is a superior quality beef with a
noticeably exquisite taste and tenderness.
Rossi Farm markets beef by the side or split side. A split side is a selection of cuts from
both the front and hind quarters. When
you order a side or split side you can decide how you want your meat cut.
Our animals are processed at a USDA inspected slaughter
faculty. The meat is cut and wrapped by
a professional meat cutter.
All our beef is raised and fed to achieve High
Choice or Prime quality grades on a diet of grass, grain and hay. You will
taste the difference.
We also sell breeding stock (cows, bulls) and
calves for show and feeder cattle.
Fresh
Eggs
Fresh Eggs in stores can
be called fresh up to 120 days after they were laid, if they are kept
cold. At the Rossi Farm, the longest we will keep eggs in stock would be
just over a week, and they are kept refrigerated while in storage, better then you would find at most grocery stores.
Our chickens are kept in large pens that allow them to free range outside.
We use Red Comets, a commercial egg laying breed, known for their heartiness in Northeast winters and their large brown eggs.
